Baby Beets

 

Beets are ready for harvest approximately 60 days after planting. While the beets we planted weren’t quite ready for harvest, we were able to thin them.

Stephanie Drozd of The Organic Gardener thinned the beets to about three to four fingers' width apart, which is closer to our ideal spacing of a fist’s width between beets.

As Drozd thinned the beets, she hilled, or packed the soil, around each of the remaining beets in the garden.

In addition to thinning beet plants, Drozd said we can also thin the leaves of the plants.

“If you cut the leaf at the bottom of the stem, it won’t affect the roots,” she said. “Never cut [leaves] from the middle of the growth. Always [thin] from the outside going in.”

The 60-day mark for our beets will be Aug. 6. We’ll be keeping a close eye on the garden to make sure none of the beets pop up above the soil between now and then. But if they do, we’ll make sure to cover them with soil, per The Organic Gardener’s directions.
