What is Chamoy? See How Family-Run Company Makes the Sweet, Spicy Mexican Sauce

Have you heard of chamoy? If you haven’t, be prepared to want to try it. It’s a traditional Mexican sauce that is sweet, sour and tangy. You can put it on almost everything — including your favorite cocktails.

WTTW News stopped by Big Mich, a family-owned company that specializes in house-made micheladas and is now making chamoy at its Willowbrook headquarters. There’s an original lime flavor, plus strawberry and mango.

If you have tried Mexican candy, well, chamoy can be considered the liquid version. Chamoy sauce is bright red and packed with flavor — and once you taste it, it’s hard to stop.

“We use our proprietary blend of spices,” said Bich Mich owner Javier Garcia, who noted chamoy is typically made of stone fruit pulp blended with dehydrated chili and lime for acidity. “… It’s part of making sure it’s very Mexican and very cultural-forward.”

The result is thick, tangy goodness.

“To make it to the consistency like this, it takes at least 45 minutes,” Garcia said as he pulled out a layer of chamoy from a bucket. “It’s a labor of love because it’s thick and because there’s no machinery that we could operate that would make it easier for us. … It’s a lot of elbow grease.”

The flavorful sauce can be added to fruit, veggies, candy and drinks. Garcia said his chamoy is made to stick firmly to the rim of your favorite cocktail glass.

The family-run business has been operating for six years, offering its take on Mexican classics.

“I always say we are family-first, offering premium products, cultural-forward, … and that’s what we have always been rooted on,” Garcia shared.
